- 1 kg Crabs
- B. Finely minced & SautƩ in garlic butter spread (see pic)
- 3 garlic
- 1 brown onion
- 1 shallot
- 1-2 inches ginger
- 5 red chillies or Bird eyed chillies
- 5-8 big GREEN chillies
- C. š
- 2 tbsp garlic butter spread
- 1 teaspoon coriander powder
- 1 teaspoon ground white pepper
- 1 teaspoon ground black pepper
- C. The sauce
- 3 tbsp sweet soy sauce
- 3 tbsp Oyster sauce
- 1-2 tsp corn flour diluted in 1/2 cup of water
- Optional (choose one)
- Bunch coriander leaves - chopped (we love coriander)
- Few sprigs of curry leaves
- Chopped spring onion or scallions

- Pls note that we don't measure ingredients when cooking at home
- So, adjust ingredients especially the amount of chillies used
- No salt used in this dish. Adjust oyster sauce & sweet soy sauce
Steps to make to make Dancing Crabs
- Clean crabs. Cut & CRUSH (smash) each piece with heavy mallet, pestle or heavy meat knife. Next, Finely mince ingredients in B. To mince, i usually put everything in B in my pull-chopper and chop everything together into texture that im looking for. Prepare all ingredients.
- First of all, heat few tablespoons of cooking oil in a wok or deep pan. Next, Cook crabs until it turns bright red. Transfer it to a plate and keep aside. Using the same wok/pan, add butter or garlic butter spread. Add all minced ingredients. SautƩ until aromatic. Add coriander powder and ground pepper, both black and white. Stir to combine.
- Next, add both Oyster and sweet soy sauce. Mix well and then stir in corn flour mixture. The sauce will slightly thicken. Adjust the sauce to your liking. You can add less or more water if you like.
- Add the crabs, finely chopped coriander leaves, curry leaves or chopped spring onion or scallions. Keep stirring to make sure it is fully coated in sauce. Taste and adjust seasonings accordingly. (You can add a pinch of salt and a teaspoon of sugar if needed). Dish up.
- Extra notes: This same sauce can be used to coat deep fried chicken and fish as well.
